Bitter Gourd is a vegetable which is very bitter in taste but at the same time nutritious too. It is available whole year and is mostly being planted in tropical countries. The kids do not like to eat it due to its taste but as far as adults are concerned, they love it.
Here in Mauritius, we eat it along with bread, rice and pharata. My children did not like to eat it before but the way I prepare it, has eventually make them appreciate it too. It is very easy to make but needs to be soaked in salted water first just to take out the bitterness. You can prepare it in different ways such as fried, stuffed, or vindaye.
As it is winter here in the month of June, so we can say that bitter gourd pickle is great for this month as we normally enjoy eating pickles mainly during this season.
Well, as bitter gourd pickle is concerned, I am going to share with you my own way of preparing it. If you try my this recipe, you will find that the bitterness will decrease a lot and everyone can enjoy eating it.
