Bitter Gourd is a vegetable which is very bitter in taste but at the same time nutritious too. It is available whole year and is mostly being planted in tropical countries. The kids do not like to eat it due to its taste but as far as adults are concerned, they love it.
Here in Mauritius, we eat it along with bread, rice and pharata. My children did not like to eat it before but the way I prepare it, has eventually make them appreciate it too. It is very easy to make but needs to be soaked in salted water first just to take out the bitterness. You can prepare it in different ways such as fried, stuffed, or vindaye.
As it is winter here in the month of June, so we can say that bitter gourd pickle is great for this month as we normally enjoy eating pickles mainly during this season.

Bitter Gourd Pickle Recipe
It is a very easy recipe but you need to know the techniques of how to prepare it. Once you get it, then you can make any pickle with the same ingredients whether it is for other vegetables or even fruits such as mangoes, tamarind, olive, and many more.

- Serves: 4 persons
- Total Time: 1 hour
Ingredients
- 4 Bitter Gourds
- 4 tbs of Mustard Seeds
- 3 cloves of Garlic
- 3 dry Chillies
- 1 tbs of Vinegar
- 1 tsp of Turmeric Powder
- 1 chopped Onion
- Salt to taste
- 3 tbs of Oil
Instructions
- Cut the bitter gourd lengthwise in half, then take out all the seeds.
- Soak them in salted water for 15 minutes.
- Drain them and cut them lengthwise.
- Add salt and mix well.
- Place white paper on a tray, then put all the bitter gourds on it and leave to dry in the sun. Here, it depends if the sun is bright, your bitter gourd will dry faster. Leave them for 30 minutes.
- Heat oil in a saucepan, then add the bitter gourds and let them fry for 5 minutes in medium heat.
- Take them out and put them in a bowl, then leave to cool down.
- Ground the mustard seeds, garlic and dry chillies.
- Add the turmeric powder to the spices along with a pinch of salt.
- Add all the spices to the fried bitter gourds along with the vinegar and chopped onion.
- Mix well along with 3 more tbs of oil and cover it.
- ***Please note that you can serve this pickle the next day as the taste will be best.
